Our client, a leading fine dining restaurant, is looking to appoint a successful Head Chef to based in Maputo.
JOB SUMMARY:
• Lead and manage the entire kitchen team, fostering a culture of excellence, collaboration, and respect.
• Design and launch seasonal, innovative menus, balancing creativity with customer preferences and profitability.
• Masterfully prepare a variety of grilled meats and dishes using international techniques and fire cooking methods.
• Ensure high standards of food quality, presentation, and consistency across all dishes.
• Oversee inventory, supplier relationships, and kitchen cost controls, including waste reduction.
• Uphold food safety and hygiene standards in compliance with HACCP regulations.
• Support recruitment, training, and performance evaluation of kitchen staff.
• Work closely with the front-of-house team to maintain high levels of guest satisfaction.
• Report on kitchen performance, including dish quality, team productivity, and profitability.
Qualifications:
• Proven experience as Head Chef in fine dining restaurants
• Strong skills in meat preparation, grilling, fire techniques, and seasoning
• Culinary Arts Degree (international training preferred)
• HACCP certification (or equivalent)
• Excellent leadership and communication skills
• Experience managing kitchen budgets and operations
• Fluency in English (Portuguese is a plus)
• International experience, especially in Africa, is an advantage
